Sardines

Sardines in oil hors-d'oeuvre

Preparation time: 10 minutes

Ingredients for 4 servings::
400 grams sardines in oil
Two onions, finely minced
Two hard-boiled eggs, cut into wedges
One tablespoon chopped capers
One tablespoon chopped parsley
10 slices of toasted sandwich bread
30 grams of butter curls
Juice from half a lemon
Salt

Preparation

Remove the sardines from the can, drip-drain them without breaking them and arrange them into a circle on a round serving dish. At the centre of plate place the minced onions, chopped capers and the wedges of egg.

Sprinkle the sardines with lemon juice and cover with chopped parsley. Slightly brown the sandwich bread slices, cut them into triangles and place them on a small plate. Cover with a napkin. In another plate put the butter and take all three to the table.

Butter grill sardines

Preparation time: 25 minutes

Ingredients for 4 servings:
8 slices sandwich bread
120 grams sardines in oil
60 grams butter (softened at room temperature)
One and a half tablespoons of lemon juice
One tablespoon paprika
One and a half tablespoons brandy
One and a half tablespoons tomato purée
Salt

Preparation

After thoroughly draining the oil from the sardines, eliminate their skin and bones and then place the meat in a large bowl, breaking it up with a fork. Then add the other ingredients and mix well with a wooden spoon until they are all well blended.

When the mixture has taken on a mousse consistency, spread a bit of it on the bread slices, already freed of the crust, and place these slices on the grill (or stove plate). Heat for a short while over low heat. Serve immediately, after arranging them on a serving plate.
