Herring

Herring salad

Preparation time: 15 minutes

Ingredients for 4 servings:
4 fresh herring fillets
4 medium-sized potatoes, boiled just right and peeled
Two small slices of raw onion
One medium-sized beet
1_ tablespoons French mustard
6 tablespoons olive oil
Two tablespoons vinegar
Pepper, just milled

Preparation

Cut the anchovy fillets into pieces, dice the boiled and peeled potatoes and half of the beet, and place these ingredients into a salad bowl.

Then place in a blender the remaining beet, two slices of raw onion, the French mustard, the oil and vinegar and mix everything into a red sauce.

Dress the anchovy salad with this sauce, add a bit of just milled pepper and toss it well before serving.

This is a very tasty Swedish dish. If you wish, you can add a tablespoon of finely minced parsley to it.

Smoked herring barbecue

Preparation time: 30 minutes
Cooking time: 15 minutes

Ingredients for 4 servings:
2-4 smoked herring (according to size)
40 grams butter
One sprig parsley
A few slices sandwich bread

Preparation

To soften and desalt the herring, cook them in a pot with hot water without bringing it to a boil. Remove from the heat after a couple of minutes and drain them thoroughly.

Butter each herring and place them on the barbecue grill (if you're using a gas stove, make sure the flame does not touch the skin, causing harmful burns). Roast the fish very delicately, letting the butter be absorbed and turning them over only once.

In the meantime, toast the buttered bread slices cut into triangles. Just before serving, place the herring on a hot serving plate garnished with a parsley sprig on the side. In another dish place the bread triangles covered with a napkin to keep them warm.

If you wish to give an Italian touch to this English dish, marinate the herring in olive oil with parsley a few hours before grilling. In this case, exclude the butter.

German style herring cocktail

Preparation time: 30 minutes

Ingredients for 4 servings:
4 smoked herring fillets
Two egg yolks
Two small jars of yoghurt
Two tomatoes
One tablespoon chopped parsley
Lemon juice
Salt
Pepper
A pinch of mustard

Preparation

Carefully wash the herring fillets, dry them and cut them into thin strips. Bathe the strips with lemon juice and place them into four small serving bowls. Prepare the sauce by pouring the yoghurt into a bowl, add the egg yolks, a touch of mustard according to taste, salt, pepper and the not too ripe tomatoes with skin and seeds removed and cut into small pieces.

Mix well and pour this sauce onto the herring already placed in individual bowls. Top with minced parsley.

This preparation is also indicated for serving shrimp cocktail.

Herring fillets with composite sauce

Desalting time: 3 hours
Preparation time: 20 minutes

Ingredients for 4 servings:
8 smoked herring fillets
Two glasses milk
1_ decilitres mayonnaise
Half litre mashed soft roe
A few drops of vinegar
Two tablespoons of a finely minced mixture of equal parts of onion, chervil, tarragon and celery
A pinch of Cayenne pepper

Preparation

e the smoked (or simply salted) herring fillets and skin them. Desalt them in the milk, well aligned in a deep dish, for three hours.

In the meantime, prepare the sauce by adding the mayonnaise to the soft roe. Season with a touch of Cayenne pepper and a few drops of vinegar, and flavour with two tablespoons of onion, chervil, tarragon and celery mince (in equal parts).

Mix the mixture well and thinly pour it over the well-drained herring fillets arranged on an oval serving dish.

This strong-tasting dish can also be served with hot grilled home-made style bread slices or toasted sandwich bread. Soft roe is sold canned in the best delicatessen shops.

Norwegian style herring salad with potatoes

Preparation time: 20 minutes

Ingredients for 4 servings:
4 pickled herring fillets
4 medium-sized potatoes, boiled just right and peeled
4 tablespoons mayonnaise
One tablespoon onion minced together with a bit of garlic

Preparation

Drain the vinegar from the herring fillets and cut them into small regular pieces. Dice the boiled and peeled potatoes and place these ingredients in a salad bowl.

Then add the mayonnaise mixed with a tablespoon of finely minced onion and a small piece of garlic. Mix everything till it blends well and serve.

This tasty appetiser is easy to prepare. In Scandinavia they also add pickled vegetables, but this gives the salad a rather slightly soured flavour.
