Spaghetti with anchovies
Preparation time: 15 minutes

Skin the garlic clove and place it in a terracotta pot with oil. Allow the garlic to simmer over low heat and remove it when it turns golden. Turn off the heat, add the anchovies and crush them with a wooden spoon until they have completely melted, forming a cream.
Put abundant slightly salted water (very little salt because the anchovies are very salty) in a pot, bring to a boil and cook the spaghetti till they are "al dente". Drain them and put them in the pot where the anchovies have been prepared.
Mix well over very low heat until the pasta has absorbed the oil, and serve immediately without adding cheese.

Anchovy baked pie
Preparation time: 20 minutes

Carefully debone the anchovies, dry them delicately with a paper towel and arrange them one next to the other in an oil-greased baking tin. Sprinkle them with a bit of parsley minced together with a garlic clove and salt, pepper, crumbled left-over bread and a full tablespoon of olive oil.
Cover with a second layer of anchovies, and season in the same manner. Then place the tin in a preheated oven (180°C) and cook for about 20 minutes. When the top of the layer is nicely golden, remove the tin from the oven and serve immediately.
The anchovies can also be arranged in a single layer, after being carefully filled with a spoonful of stuffing and closed, forming a kind of very tasty sandwich.
