This product (Portunus Pelagicus) is fished in Thailand - of which 80% along the Thailand Gulf coasts and 20% in the Andamane sea.
Fishing periods range from November to February and from June to mid July, in relation to the absence of monsoons.
For some years now a biological fishing layoff period going from March to May has been imposed to favour reproduction.
Processing starts with the verification of the raw material's quality by analysing its perfect preservation conditions on arrival to the factory. This is immediately followed by accurate cleaning first in cold and then in hot water so as to obtain cleaning and shelling. At this point it is possible to differentiate the various product sizes according to how many fish are counted in one kilogram. Lower the number, greater the quality.
Moreover, the highest choice is obtained with the presence in the can of a good percentage of pincer meat.
At this point the product is ready for packaging either in glass jars or in cans. The pickling liquid only consists of water and salt first inserted cold and then hot so as to fully preserve the original flavour and aromaof the crab. The usual sterilisation process is performed in automatic control autoclaves to ensure complete sterility.
